Floral aromas, with notes of candied papaya and melon, with a syrupy white tea finish. Definitely an excellent addition your list of favourites.

This specific Papayo variety is very rare and exotic in Colombia, with exciting flavours and the added notes of the processing method chosen by the farmer, which consisted on picking ripe beans and fermenting dry for 150hr closed with the addition of lactic bacteria, then pulped and fermented for another 72hr with the juices produced in the first fermentation. One wash and rinse, then sun dried.
